I teach the Parsley, Sage Rosemary and Thyme classes around the Kansas City Metropolitan area and part of the class includes eating some of the fantastic dishes that anyone can prepare using fresh herbs. So get to planting, enjoy the beauty of the plants, and then prepare for a feast of the senses. There is nothing quite like fresh herbs in cooking! Enjoy!

Tilapa w/prosciutto and and sage

1-2 tilapia fillets per person (any white fish will do)
1 prosciutto slice per fillet
3 fresh sage leaves per fillet
Olive oil
Pepper

Thoroughly defrost fillets. Lay sage leaves on fillet and wrap with slice of prosciutto. Sprinkle lightly with pepper. Heat 1-2 tbsp of olive oil in non-stick pan over medium heat. Cook until prosciutto is dark brown and then flip over and cook the other side. Be sure that fish is completely cooked before removing from heat.

 

Sage Crisps

Fresh sage leaves, rinsed and dried
Olive oil or vegetable oil
Salt (optional)

Heat a 1/2 inch layer of oil in non-stick pan on medium-high heat until oil is shimmering. Add a few sage leaves, and be prepared to pull them out immediately, they cook quickly! Drain on a paper towel and blot carefully, they will be brittle. Lightly salt to taste and eat immediately.

 

Lemon-Thyme Crisps

3 1/4 cups flour
2 tsp baking soda
4 tsp fresh lemon thyme or regular thyme leaves
2 sticks salted butter
1 1/2 cups sugar
2 1/2 Tbsp lemon zest (fresh lemons are best!)
1 large egg
3 Tbsp fresh lemon juice
1 Tbsp ginger
confectioner's sugar (for dusting)

In medium bowl, combine flour, baking soda, salt and thyme. In large bowl, beat together butter, granulated sugar and lemon zest until light and fluffy. Add egg, beating until combined well, and beat in lemon juice and ginger. Add flour mixture, beating until just combined.

Halve dough and form into logs of about 2 inches in diameter, wrap in wax paper and freeze for at least twenty minutes or until firm. Preheat oven to 350 degrees and slice in 1/4 inch slices. Place on ungreased baking sheets and bake for 12 minutes or until golden.
